MayDay Bank Holiday...

...was spent in the picturesque seaside town of North Berwick on the South-East coast of Scotland. Camping old-skool style with the tent.
We spent two blissful days away with the weather defying the forecasts and being outrageously sunny yet extremely blustery. Rain stayed off until we were tucked up nice and cosy in our nest of sleeping bags and duvets each evening.
We did some extremely early morning hill-climbing -

and some eating of blue, bubblegum flavoured ice-lollies.


We wrapped-up warm but forgot our sunscreen, hence we're all sporting the blush of T-zone sunburn now we're at home.
We ate A LOT of refined carbs. :((
But back on the range we're eating healthier food again. Red thai curry with rice for dinner, followed by a slice of (almost) sugar-free apple coffee cake.

This is sweetened with chopped dates, a couple of tablespoons of agave nectar and - of course - the crunchy cinnamon sugar topping. Really yummy and super-filling due to the wholemeal flour used. I also baked a sugar-free date and pecan cake but I really need to fiddle with both recipes a bit more before I can post them. Their original versions are in Leah Leneman's 'Easy Vegan Cooking'.
Last Thursday, McGonnagle and I baked some chewy chocolate chocolate chip cookies for her to take into school on Friday.

After initially intending to make the classic Dreena B. choc chip cookie, I saw Jessy's post about these bad boys and instantly decided to make them instead. I mean, the only thing a class of seven-year old punks like better than chocolate - is more chocolate - right? The other kids sporadically bring home-baking into school for sharing out amongst classmates and McGonnagle often goes without because the goods in question contain eggs or dairy. She was very excited to be taking some goodies in with her that she could enjoy as much as her classmates. Verdict? These were the bomb! Chewy, chocolatey and delicious - these were so popular she only had a couple left by the end of the morning. Just enough to fortify me as I packed the car with our camping gear...

that's super stellar that isa's chewy cookies when over so well with McGonnagle's classmates - and i can imagine that's pretty darn cool - her getting to bring in some rock'n & chocolaty vegan cookies to share & enjoy! yay!

what a wonderful, fun, and beauuuuutiful way to spend your holiday weekend! that's awesome that the rain held off until the evenings and that there was plenty of sunshine for everyone!

you better believe i'm waiting for you to fiddle with those recipes and post 'em! red thai curry sounds most excellent (i love a good curry) and your apple coffee cake looks like a slice of heaven! mmmmmmmmmm!

That looks like a pretty idyllic weekend. I love that cookie recipe! I like to put in crushed up candy canes for a christmassy variation.

DJ, North Berwick is the favourite holiday destination of this family! We're so jealous! And we know that beach very well. As do Bob and Daisy!
Can I second jessy's request for a speedy red Thai curry recipe?
Glad the choc. chip cookies went down so well. Great advert and proves we vegans, contrary to popular belief, eat very tasty stuff!

Theresa, Jessy - this recipe was awesome and very, very easy so I can see this becoming the other choc chip cookie recipe we use all the time!
Penny, Niecey - I'd never been to North Berwick before and it was LOVELY! We will DEFINITELY be going again! And the kite pic was one of my faves!
Sal - Recipes on the way - I don't need an excuse to bake them again in the name of tweaking!
